MULSUM
1 litre of white dry wine and 2 spoons of honey.
Keep in fresh some hours and drink cold.

SALA CATTABIA
Put into soak 200 grams of crumb of bread with water and vinegar.
Knead it with 1 few little spoon of milled pepper , 1 little tuft of mint, little spoon of coriander seeds and 2 good pounded clove of garlic. At the end 200 grams of salty cheese (goat or sheep) amalgamate with few water and oil. Make little balls ready to bring on the table.

EPITYRUM ALBUM
Take away the nut to 400 grams of black and green olives. After to have minced them, mix them with 1 little spoon of cumino seeds 1 of coriander seeds and 1 of fennel seeds. Add a tuft of minced mint and rocket, mix with olive-oil and smear on toasted bread.

CAKE OF CHEESE
To pounded 4 cloves of garlic, add 400 grams of fresh cheese, and as last a tuft of minced parsley and rocket, 1 little spoon of coriander seeds, and salt. Flavour all with olive-oil and few vinegar. Make a cake, keep in cold and serve.

Tenere in fresco alcune ore e bere freddo.

SALA CATTABIA
Mettere a bagno 200 grammi di mollica di pane con acqua e aceto, impastarla con 1 cucchiaino scarso di pepe macinato, 1 ciuffetto di menta, 1 cucchiaino di semi di coriandolo e 2 spicchi d’aglio ben pestati ed infine con 200 grammi di formaggio salato (pecora o capra). Amalgamare con pochissima acqua e olio, formare delle palline pronte da portare in tavola.

EPITYRUM ALBUM
Togliere il nocciolo a 400 grammi di olive nere e verdi. Dopo averle ben tritate, mescolarle ad un cucchiaino di semi di cumino, 1 di semi di coriandolo ed 1 di semi di finocchio. Aggiungere un ciuffo di menta e rucola tritati, mescolare con olio di oliva e spalmare su crostini di pane.

TORTA DI FORMAGGIO
Pestare 4 spicchi d’aglio, aggiungere 400 grammi di formaggio fresco ed in ultimo un ciuffo di prezzemolo e di rucola tritati, 1 cucchiaino di semi di coriandolo e sale quanto basta. Condire il tutto con l’olio d’oliva e pochissimo aceto. Formare una torta, tenere in freddo e servire.
